[ingredients]
Chocolate Cacao Nibs Truffles:
½ cup maple syrup
1 tsp vanilla extract
½ tsp cinnamon powder
⅛ tsp sea salt
4 tbsp water
⅓ cup melted cacao butter
⅓ cup cacao powder
A handful of Suncore Foods® Cacao Nibs
Toppings:
Suncore Foods® Blue Butterfly Pea Powder
Suncore Foods® Emerald Pandan Powder
Suncore Foods® Pink Pitaya Powder
Suncore Foods® Yellow Goldenberry Powder

1. Blend almond butter, maple syrup, vanilla, cinnamon, sea salt, Suncore Foods® Cacao Nibs, and water in high speed blender until smooth.

2. Add melted cacao butter slowly and blend until well mixed. Add cacao powder and blend. You will need to stop 1 or 2 times and push the mixture down using a spatula.
3. Once blended together, pour into a small pan and let firm up in the refrigerator. Once the mixture hardens, roll into equally sized balls (we use a small cookie scoop to ensure even sizing) and dust with Suncore Foods® Powders.
