Tonight, we are embarking on a colorful adventure with some delicious dough therapy! It’s amazing to see the natural shades come alive in our Suncore Foods® kitchen as we mix together Suncore Foods® Autumnal Baked Sweet Potato Yam, Blue Butterfly Pea, Midori Jade Matcha, Ruby Red Radish, and Purple Sweet Potato powders to create this whimsical loaf. For One Batch of Mixed Sourdough Dough (prepared through the initial mixing stage using five small bowls and five bowl covers):
2 tsp Suncore Foods® Autumnal Baked Sweet Potato Yam Powder
2 tsp Suncore Foods® Blue Butterfly Pea Powder
2 tsp Suncore Foods® Midori Jade Matcha Powder
2 tsp Suncore Foods® Purple Sweet Potato Powder
2 tsp Suncore Foods® Ruby Red Radish Powder
1/4 tsp turmeric

1. Prepare your favorite sourdough bread recipe through the initial dough mix.
2. Allow the dough to rest for 10 minutes.
3. Divide the dough evenly into 5 separate bowls.
4. Add the Suncore Foods® Powders to the dough portions as follows:
Red: 2 teaspoons
Suncore Foods® Ruby Red Radish Powder
Yellow: 2 teaspoons
Suncore Foods® Autumnal Baked Sweet Potato Yam Powder + 1/4 teaspoon turmeric
Green: 2 teaspoons
Suncore Foods® Midori Jade Matcha Powder
Blue: 2 teaspoons
Suncore Foods® Blue Butterfly Pea Powder
Purple: 2 teaspoons
Suncore Foods® Purple Sweet Potato Powder
5. Using a scooping and folding motion, gently work each powder into its dough until evenly colored. Rinse your hands between each color to prevent color transfer and keep the shades vibrant.
6. Continue with your normal bulk fermentation process. Perform your first and second rounds of coil folds on each colored dough separately.
7. During the final coil fold, stack the doughs in rainbow order. Choose whether you’d like red or purple to be the outermost layer, then perform one final coil fold to gently combine the layers while maintaining the rainbow effect.
8. Place into the large bowl. Continue fermenting, shaping, and baking according to your usual sourdough method.
9. Notes – Coil folds are recommended for this loaf rather than stretch-and-folds, as they help preserve the individual color layers.
Suncore Foods® Powders can occasionally influence fermentation activity. Monitor the dough rather than relying solely on timing, and adjust fermentation as needed. For the most vibrant crumb, avoid over mixing with too many coil folds or pre shaping.
