Good for 2-3 Servings:
1 cup uncooked short grain rice, makes 3 cups cooked
1 cup water
1/4 tsp Suncore Foods® Blue Butterfly Pea Powder
2 tbsp oil
3/4 tsp salt or to taste
Pepper
Veggies (totally up to you!):
1 onion, diced
2 cloves garlic, minced
1/2 cup corn
1/2 cup peas
1/2 cup diced carrots
Chopped kale
1 red bell pepper, diced
1 cup chopped purple cabbage

1. Wash the rice through running water 2 to 3 times. In a rice cooker, add in the water, washed rice, and Suncore Foods® Blue Butterfly Pea Powder. Leave to cook and then cool for 15 minutes. Cooling the rice prevents it from being too sticky and mushy when stir-frying! 2. In a large pan or skillet, heat 2 tbsp oil. Add in the chopped onion and garlic. Saute until cooked through and garlic is lightly brown. Add in the rest of the veggies. Season with 3/4 tsp salt, or to taste and some pepper. Mix in the cooled rice. 3.
