So take the bananas that you're holding onto to make bread, pop a couple in the freezer to make some delicious, vegan popsicles instead! With your favorite fruits and frozen bananas, toss them into a blender until smooth, and you have yourselves some pre-popsicles! And for some extra pizazz and wow factor sprinkle in some Suncore Foods® Powders to add rich, bright colors to your ice pops! These Rainbow Banana Popsicles use Aqua Blue Spirulina, Midori Jade Matcha, and Pink Pitaya, just to name a few. After a quick freeze, you can enjoy the tropics anytime of the year, from anywhere in the world! We love convenience, like eating food on a stick and smoothly swapping ingredients out in a recipe.

Makes 10 Popsicles

4 frozen bananas
1 cup pineapple, chopped
1 cup dragon fruit, chopped
1.5 cups vanilla oat milk
2 tsp pure vanilla extract
Optional - maple syrup (if needed) to taste
½ tsp Suncore Foods® Aqua Blue Spirulina Powder
1 tsp Suncore Foods® Midori Jade Matcha Powder
1 tsp Suncore Foods® Pink Pitaya Powder
1 tsp Suncore Foods® Red Beet Powder
1 tsp Suncore Foods® Yellow Goldenberry Powder

1. Place all ingredients in a blender and blend until smooth and well combined. Equally divide mixture into 5 bowls and mix in 1 color into each bowl.

2. Assemble into molds – Start with any 1 color and pour or spoon a small amount into each popsicle mold. Freeze for 20 minutes to allow the mixture to lightly solidify. Refrigerate remaining bowls while the mixture is freezing.

3. Repeat this process for remaining color mixtures allowing each layer to lightly solidify before adding the next layer.

4. Freeze overnight and allow the popsicles to thaw for 2-3 minutes before removing from molds and serving.
