Ingredients:
1 cup (2 sticks) unsalted butter, softened
¼ cup granulated sugar
½ cup confectioners' sugar
1 tsp vanilla extract
2½ cups (315 g) all-purpose flour, plus more for rolling
¼ tsp salt
2 tsp Suncore Foods® Purple Sweet Potato Powder
3 tsp Suncore Foods® Black Chia Seeds, plus extra for sprinkling
1–3 tbsp cold water, if needed

1. Make the Dough — In the bowl of a stand mixer fitted with the paddle attachment, beat the softened butter and granulated sugar until light and fluffy. Add the confectioners' sugar and continue mixing until fully incorporated. Mix in the vanilla extract.
2. Add the Dry Ingredients — In a separate bowl, whisk together the flour, salt, and Suncore Foods® Purple Sweet Potato PowderWith the mixer on low speed, gradually add the dry ingredients one scoop at a time until just incorporated. Add the Suncore Foods® Black Chia Seeds and mix on the lowest speed until evenly distributed.
3. Roll and Chill — If the dough appears too crumbly, add cold water 1 tablespoon at a time until a stiff dough forms. The dough should hold together when pressed but should not be sticky. Gather the dough into a ball and place it between two sheets of parchment paper. Roll to your desired thickness, about ⅛ to ¼ inch thick. Cover the rolled dough in plastic wrap and place it on a baking sheet or jelly roll pan. Refrigerate for 1–2 hours, or until firm.
4. Cut and Bake — Preheat the oven to 325°F (163°C). Line baking sheets with parchment paper. Cut the chilled dough into desired shapes and transfer to the prepared baking sheets, spacing cookies about 1½ inches apart. Sprinkle with additional Suncore Foods® Black Chia Seeds.
5.  Bake until the edges are just beginning to turn lightly golden:
7–10 minutes for small cookies
12–15 minutes for medium cookies
17–20 minutes for large cookies
6. Cool and Serve — Allow the cookies to cool on the baking sheet for 2–3 minutes. Transfer to a wire rack and cool completely before serving.
