Lemon Hemp Quinoa Cookies:
1 cup Suncore Foods® White Quinoa Snow Flakes
¾ cup blanched almond flour
¼ cup Suncore Foods® Hemp Seeds
¼ tsp baking powder
¼ tsp salt
1 tbsp lemon zest (about 1 large lemon)
¼ cup melted vegan butter
¼ cup maple syrup
2 tbsp fresh lemon juice
1 tsp vanilla extract

Yellow White Chocolate Topping:
1 cup vegan white chocolate chips
Yellow natural food coloring or turmeric powder

1. Add the Suncore Foods® White Quinoa Snow Flakes to a large bowl with the almond flour, Suncore Foods® Hemp Seeds, baking powder, salt, and lemon zest. Whisk until well combined.
2. In a separate bowl whisk together the melted butter, maple syrup, lemon juice, and vanilla.
3. Combine wet and dry ingredients until a soft dough forms. Refrigerate for 20 minutes. Preheat the oven to 350°F.
4. Firmly press the cookie dough into each cavity of a lemon-shaped silicone mold. Bake for 12-14 minutes until lightly golden around the edges. Allow them to cool completely before removing from the mold.
5. Melt the white chocolate. Add a pinch of turmeric powder or natural yellow food coloring to tint it pale lemon-yellow.
6. Spread about 1 tablespoon of melted chocolate into each clean lemon mold cavity, coating the detailed side of the mold. Place a baked cookie on top of the melted chocolate and gently press.
7. Freeze for 10-15 minutes. Pop out the cookies & enjoy!
