Suncore Foods® Pancake & Waffle Mix:
1 cup Suncore Foods® Heroic Blue Spirulina Pancake & Waffle Mix
1 cup Suncore Foods® Zen Midori Matcha Pancake & Waffle Mix
Suncore Foods® Powders:
½ tsp Suncore Foods® Aqua Blue Spirulina Powder
½ tsp Suncore Foods® Midori Jade Matcha Powder
Other Pancake Ingredients:
1 tsp x 2 pure vanilla extract
1 cup x 2 unsweetened vanilla oat milk
¼ tsp x 2 ground cinnamon
1 large egg
3 tbsp melted butter
Strawberry Jam (prepare jam prior to making pancakes):
2.5 cups fresh strawberries, halved or quartered
½ cup water
2 - 4 tbsp coconut sugar
1/2 - 1 tsp pure vanilla extract
1/3 cup Suncore Foods® Chia Seeds
Cardamom Matcha Cream Spread:
1 cup coconut whipping cream
¼ cup powdered sugar (or to taste)
¼ - ½ tsp cardamom
½ tsp Suncore Foods® Midori Jade Matcha Powder (substitute Matcha for any other Suncore Foods® Powder)

1. Pancakes — Prepare batter: In 2 separate bowls, combine 1 cup Suncore Foods® Pancake & Waffle Mix, 1 tsp vanilla extract, 1 cup vanilla oat milk, ¼ tsp cinnamon, 1 large egg, melted butter, and the corresponding Suncore Foods® Powder of the same color as the respective Suncore Foods® Pancake & Waffle Mix. If the pancake batter is too dry, add some more oat milk 2 tbsp at a time. Follow Suncore Foods® Pancake & Waffle Mix package instructions to cook the pancakes. When ready, serve pancakes with the following accompaniments to complete your grazing board.
2. Strawberry Jam — Place strawberries & water in a saucepan & bring to boil. Cook for 5 minutes. Reduce heat & mix in sugar and vanilla extract. Simmer for approximately 30 minutes while stirring regularly & gently mash the fruit while it cooks. Remove from heat & allow the jam to cool completely. When ready, mix in Suncore Foods® Chia Seeds and set aside or refrigerate for minimum 2 hours before serving.
3. Cardamom Matcha Cream Spread — Whisk together all ingredients until smooth and well combined. Adjust sugar if needed. For a thicker cream spread, add some more powdered sugar. For a thinner spread, add some oat milk.
4. Accompaniments — Maple syrup, fresh fruit, fresh strawberry chia jam, cardamom matcha cream spread, and chocolate chips.
